Grilled Corn on the Cob
This is a summer grilling staple, so this is never going away from your cookout menu. However, there are many more ways to do this snack than just popping it on the cooking grid and waiting for it to be done. One is brushing some garlic butter before grilling the cob on medium heat for about 25-30 minutes and season the cooked corn with smoked paprika, pepper, and Kosher salt.
If you want yours the Mexican way, grill them until they look lightly charred and brush the cob with a bit of mayonnaise. This may sound strange, but you won't regret the results later. Then, dust a bit of chili powder, sprinkle some fresh lime juice, and drizzle Mexican cheese on the fresh-off-the-grill corn cobs.
Grilled Shrimp
Shrimp on barbies are perfect for those seeking a meatless BBQ alternative. Here's one recipe you'll find easy enough to follow yet makes for a great backyard BBQ meal addition. The shrimp only needs to be tossed about quickly in cumin, chipotle powder, and lime juice before skewering grilling them. You can turn them into tortilla ingredients topped with avocado-corn-tomato salsa. Mmmmm, muy delicioso!
Beer Can Chicken
Here's one for the boys - "beer butt chicken," also called "chicken on a throne." The result may look like a very badly done prank, but it's not popular among summer grillers for no reason. According to Elizabeth Karmel, one of the stories on the origin of this recipe goes this way: "A barbecue pitmaster had been drinking beer - the official sanctioned barbecue circuit beverage - all day when he realized that he was going to need to eat something if he was going to last all day and into the next morning tending his slow-cooked barbecue."
"So, he opened his rig (a smoke-grill big enough for several whole hogs) and set his beer down on the cooking grate to get something small to cook from his cooler. He picked up a chicken and put it on top of his half-full can without noticing what he was doing. He looked for his beer, couldn't find it and popped open another one without a second thought. That is, until he opened the grill an hour later and, lo and behold, perched on his smoker was the first beer can chicken!"
